Brouwerij Boon is a legendary lambic brewery located in Lembeek, in the heart of the Pajottenland region of Belgium. Founded in 1975 by Frank Boon, who took over a small blending operation that produced only a few hundred hectolitres per year, the brewery has grown into one of the most respected names in traditional Belgian lambic brewing. Frank Boon was considered unconventional at the time, as he began brewing and trading regional beers at a young age when many doubted his ambitions. His dedication to the craft has since earned him honorary citizenship and worldwide recognition. Brouwerij Boon specialises in spontaneous fermentation, the traditional process by which wild yeasts and bacteria from the local Zenne Valley environment ferment the wort. The brewery is renowned for its authentic Oude Geuze and Kriek, as well as a broader lambic portfolio that reflects deep-rooted regional tradition. The brewery currently matures its beers in four warehouses holding a combined 2.1 million litres, with wooden foeders that can last up to 200 years with proper care. Boon also collaborates with fellow lambic producers including Girardin and Lindemans. In 2025, Brouwerij Boon celebrated its 50th anniversary. Among its notable releases is the Oude Geuze Remy Le Mercier, brewed according to a historical recipe from 1559, demonstrating that lambic brewing traditions stretch back centuries. The brewery also produces Duivelsbier Wild, a departure from its classic lambic range, which has attracted significant interest both domestically and internationally. Boon opens its doors to visitors during events such as Toer de Geuze.
