Chimay is one of the world's most renowned Trappist breweries, produced at the Abbaye Notre-Dame de Scourmont in the south of Belgium. The brewery's roots stretch back to 1862, when the monks first began brewing beer within the abbey walls. Today, Chimay stands as one of only a handful of breweries worldwide authorised to carry the prestigious "Authentic Trappist Product" logo, a mark that guarantees the beer is brewed within a monastery under the supervision of monks. Chimay's portfolio centres on its iconic Trappist ales, ranging from the rich and complex Chimay Red, a brown ale first brewed in 1862, to the Chimay Blue, originally conceived as a Christmas beer and now one of Belgium's most celebrated strong dark ales. The range also includes Chimay Cinq Cents, a blond ale of 8% named to commemorate the 500th anniversary of the town of Chimay in 1986, as well as the lighter Chimay Gold at 4.8%, the strong blond Chimay Green at 10%, and the newer Cent Septante-cinq blond at 6.5%. Chimay Blue has earned particular recognition for its vintage-dated labels, a tradition rooted in its origins as a seasonal Christmas beer. The brewery's beers are exported worldwide and remain benchmarks for Belgian Trappist brewing, celebrated for their bottle-conditioned character, depth of flavour, and centuries-old monastic heritage.
