Chimay is a Trappist beer brewed by the monks of Scourmont Abbey in Belgium. Brewing began around 1862 and uses entirely natural ingredients: water from two wells within the abbey grounds, malted barley, sugar and hops. The brewery produces several variants, each with its own distinct character. Chimay beers are made entirely under the supervision of the monks. They are known for their full body, sweet notes and the warming, pleasant mouthfeel created by higher alcohol content. The characteristic fermentation with abbey yeast gives the beers their unique, complex profile with fruity and spicy nuances.
