Chimay Grande Réserve Fermentée en Barriques represents an ambitious venture by the monks of Scourmont Abbey: their potent dark ale is fermented in a blend of French and American oak, combined with a portion of their standard beer. This February 2022 edition balances 34% French oak, 41% American oak and 25% beer, creating a layered, warming brew at 10.5% ABV. The nose reveals dark fruits, chocolate and vanilla beneath a pronounced wooden character. The palate unfolds as the beer warms: sweet, layered with caramel malt, brown sugar and toasty notes, finishing with lingering wood and fruit. Unfiltered and unpasteurised, this is a beer that reaches its full potential at room temperature.
