Brasserie de Bouillon is a Belgian microbrewery located in Sensenruth, in the municipality of Bouillon, in the province of Luxembourg in the Belgian Ardennes. The brewery was founded in the summer of 1998 by Nathalie Louis and Jacques Pougin, passionate locals with a deep love for their region. Starting from Le Marché de Nathalie — a well-stocked local shop — they took on the challenge of producing authentic, artisanal beers that reflect the character of the Bouillon area. The brewery specialises in a range of unfiltered beers with bottle conditioning, a traditional method that allows the beer to continue developing in the bottle. Their portfolio consists of four core brews, each carrying names inspired by the history and heritage of the region. Highlights include the Cuvée de Bouillon and La Médiévale, with amber-coloured profiles featuring caramel malt aromas and a characteristically smooth, slightly sweet taste. Beyond their core range, Brasserie de Bouillon also creates personalised beers for special occasions such as birthdays and events. Visitors to the region can discover the brewery's beers at Le Marché de Nathalie, which doubles as a local store offering a solid selection of regional products alongside the brewery's own range. The brewery is a genuine representative of Wallonian craft brewing culture and a beloved local institution in the Pays de Bouillon.
