Septem Microbrewery was founded in June 2009 on the island of Evia, Greece, by chemist-oenologist Sophocles Panagiotou and his brother, economist Georgios Panagiotou. The brewery is located in Orologio, Evia, and its name comes from the Latin word for seven — a number representing creation — which inspired the founders to build an entire beer range around the days of the week. From the outset, Septem approached craft brewing with a distinctly artisanal philosophy, even treating hops similarly to wine grapes by focusing on vintage-style releases, a unique approach that set them apart in the Greek beer landscape. Septem's portfolio is built around a diverse lineup of craft beer styles, each named after a day of the week. The range includes Friday's Pale Ale, an American Pale Ale, Monday's Pilsner, Saturday's Porter, Sunday's Honey Golden Ale, and the flagship 8th Day IPA — a nod to creation going beyond the seventh day. The brewery produces fresh, unfiltered and filtered beers characterised by floral, citrus, and hop aromas, showcasing a commitment to quality ingredients and thoughtful brewing across multiple styles. Septem has gained strong recognition both in Greece and internationally as one of the country's pioneering craft breweries. Their anniversary beer, Dry Stone — a Brut IPA brewed to celebrate 15 years of brewing on Evia — received a Silver Medal, reflecting the brewery's growing reputation for innovation and excellence within the Greek and European craft beer scene.
