PaasIJ is the spring beer from Brouwerij 't IJ, the Amsterdam brewery founded in 1985 by musician Kasper Peterson. This maibock returns each spring in limited batches, brewed as the days lengthen and the first flowers emerge. At 7% alcohol, it delivers a full-bodied beer without excessive sweetness. The flavour weaves together malt, fruit, spice and hops in a balanced profile. Coriander seed and licorice provide a distinctive spicy finish, with underlying bitterness adding structure. Best enjoyed at 8–10°C.
