Lauwendries is a saison from Brouwerij Hof ten Dormaal, the distinctive farmhouse brewery in Tildonk where every ingredient originates from the land itself. This is no ordinary saison: the brewery crafts it dry and subjects it to a secondary fermentation with Brettanomyces, introducing natural funk and layered complexity. On the palate, grainy malts meet grassy, floral hop bitterness. Flavours of pear, apple and green banana emerge alongside pronounced yeasty and phenolic spice. The finish is dry and herbaceous, ending with a peppery tickle that captures the essence of traditional saison character. This beer embodies Hof ten Dormaal's ethos: 100% natural, no additions, and rooted entirely in their closed-loop farm production on a medieval holding.
