Schneeeule Brauerei, whose name translates to "Snowy Owl Brewery," was founded in 2016 in Berlin, Germany by Ulrike Genz. After years of dedicated research and planning, Genz launched the brewery with a singular mission: to revive the traditional Berliner Weisse, a historic wheat beer style that had nearly disappeared entirely. In doing so, Schneeeule became the first brewery in Berlin to focus exclusively on traditional Berliner Weisse production in decades, positioning itself at the forefront of a long-overdue renaissance for one of Germany's most storied regional beer styles. Schneeeule's portfolio is built around the Berliner Weisse, a naturally sour, low-alcohol wheat beer characterized by its hazy appearance, lively carbonation, and refreshing zesty tartness. The style is produced through a mixed fermentation process involving both yeast and lactic acid bacteria, giving it its signature acidity. The brewery approaches this historic style with both scholarly rigor and a craft sensibility, honoring old Berlin brewing traditions while making the beer accessible to a modern audience. Schneeeule has been recognized internationally as a champion of this nearly lost style. The brewery gained significant attention within the craft beer world, earning features in publications such as Good Beer Hunting and Punch, and was cited as a key reference in literature on classic German sour beer styles including Gose. After a temporary closure, Schneeeule announced a comeback with a new business partner, signaling continued dedication to keeping the Berliner Weisse tradition alive in its hometown.
