Chapeau is the export brand of Brouwerij De Troch, a traditional Belgian lambic brewery based in Wambeek, in the Flemish Brabant region of Belgium. The brand name Chapeau was created by the Raes family, who run De Troch, specifically to serve the French export market, where customers found the brewery's original name difficult to pronounce. De Troch is one of Belgium's established traditional lambic producers, continuing a long heritage of spontaneous fermentation brewing in the Pajottenland area, the heartland of authentic Belgian lambic production. The Chapeau portfolio is dominated by an extensive range of lambic-based fruit beers, making it one of the more fruit-forward collections in the Belgian lambic category. Alongside the fruit beers, the range includes a Gueuze and a Winter Gueuze, both produced using the traditional method of blending aged and young lambic. The fruit beers are notably sweeter in style, which sets them apart from the drier, more traditional gueuze expressions found elsewhere in the Pajottenland. This approachable, fruit-driven character has helped Chapeau build a strong following particularly in export markets such as France.
