Rimor Brewery from Maasmechelen crafts this refined tripel with a spicy twist. Named after 16th-century cartographer Gerardus Mercator, who mapped continents while seeking rare beer spices, the beer honours that spirit through Paradise Seed and Sichuan pepper. Full-bodied and aromatic, it wears a creamy head and a complex palate where fruity notes—pear, peach, apple—meet distinctive spicing. The fermentation brings yeasty, wheat-forward character, while Sichuan pepper adds a tingling finish. At 8.4% ABV and just 26 IBU, this is a balanced tripel where flavour takes centre stage.
