Pellicle Covalence is a blend of two lambics and Arabier, an amber ale by De Dolle Brouwers. Matthieu Dupont's experiment combines the fruity-sour character of lambic with malty caramel notes from the amber ale. The result is a complex, mixed-fermentation beer reflecting Pellicle Vergistingen's minimalist philosophy. On the palate, sourness and tartness give way to cherry, marzipan and almond, with lemon zest and subtle herbal hints. This is artisanal work from a young blendery focused on natural fermentation and minimal intervention.
