Nevel Zwam is a dark wild ale born from collaboration between Nevel Artisan Ales and De Natte Gijt, a Nijmegen-based brewery known for wild fermentations with locally sourced, sustainable ingredients from their own food forest.

This beer features mushroom as a key ingredient, creating a layered profile: tart acidity balanced with caramel sweetness and umami-driven savoury notes. Earthy character runs throughout, shaped by open-vat fermentation. Each batch develops differently over time, reflecting the living nature of wild yeast.

Nevel ceased production in 2024, making these beers a snapshot of experimental Dutch brewing at its most ambitious.
