After at least a year of bottle conditioning, this beer develops a complex, lively character marked by sharp acidity and fruity character. In the glass, an amber hue with a full head. The nose reveals lactic lemon, oak, and bready malt. On the palate, tart apple notes, apricot, and a light funky, barnyard character typical of wild yeast fermentation emerge.
