Elegast Cidery in Langbroek crafts ciders from heritage apple varieties grown in traditional high-stem orchards across Dutch river valleys. This Bourbon Barrel Aged expression is spontaneously fermented and matured in ex-bourbon barrels previously used for Imperial Stout. The result is a dry cider with soft, rounded character. Maturation in American oak contributes vanilla and subtle bourbon undertones, while the apples retain their natural acidity. At 7% ABV, this cider feels fuller-bodied than many standard offerings, finishing dry rather than sweet. A compelling bridge between traditional cider craft and experimental barrel aging.
