Chimay Rood is a Trappist ale brewed by the monks of Scourmont Abbey in Belgium since 1948. This dark-brown dubbel opens with a full, malty presence and complex aromas of ripe stone fruits—plums, apricots, figs—alongside delicate spice notes of clove and subtle floral hints. The house yeast character brings an elegant, lightly banana-like warmth. The palate is sweet and malt-forward with clear caramel and brown sugar notes, balanced by restrained bitterness. The mouthfeel is full and silky, with a warming alcohol presence at 7% that integrates smoothly. This is a classic of the Belgian Trappist style—approachable yet layered enough to reward repeated visits.
