Chimay Cinq Cents is the name given to this tripel in its 75cl bottle format, brewed at Scourmont Abbey. The beer traces its origins to 1862, when the Trappist monks of Chimay began brewing. Originally made solely for monastic use, it was historically not sold publicly—Father Theodore favoured a lighter ale than the darker beers the monastery produced. The tripel appears golden and bright. The nose leads with honey and citrus, accented by clove and floral hints. On the palate, fruit and spice intertwine in vivid harmony, driven by characterful Belgian yeast. The finish is clean and dry, with a pleasant hop bitterness that resolves elegantly. Top-fermented and bottle-conditioned in the traditional Chimay manner. A refined tripel that demonstrates how restraint and complexity need not be at odds.
