Babylone is Brussels Beer Project's flagship innovation: a 'bread IPA' that has redefined sustainability in brewing since 2015. At least 20% of the grain bill is replaced with fresh unsold bread from local Brussels bakeries, eliminating waste while adding a subtle toffee character to the beer.
A blend of Magnum, Cascade, Sorachi Ace and Chinook hops delivers balanced bitterness with notes of citrus and stone fruit. Despite its 7% ABV, Babylone drinks surprisingly light and crisp, with brisk carbonation that complements the dry, biscuit-forward malt profile.
The name honours the ancient Babylonians who fermented bread-dampened grain millennia ago—a circular brewing practice that Brussels Beer Project has revived for the modern age.
