Brouwerij Girardin, a family brewery since 1882 in Sint-Ulriks-Kapelle, crafts this traditional gueuze through spontaneous fermentation without added yeast, followed by maturation in wooden barrels that build complexity and subtle oxidative character. The flavour is dry and refined: gentle tartness with red apple, grapefruit peel and lemon zest, complemented by woody undertones and a touch of farmyard funk. The mineral finish is clean and elegant, without harshness. This is a classic gueuze that demonstrates the balance between young and old lambic.
