Abbaye de Forest is a blonde abbey-style ale brewed at Brasserie de Silly since 2007, a brewery established in 1850 in the Walloon village of Silly, southwest of Brussels. The beer's recipe traces back to the Benedictine monks who once inhabited the abbey from which it takes its name. Top-fermented and bottle-conditioned, it is crafted from pale malt and a blend of Kent and Hallertau hops, combined with the brewery's signature yeast strain. At 6.5% ABV, it presents a subtly perfumed nose with floral and spicy hop character. The palate reveals fruity impressions—raisins and crystallised fruits—balanced against a zesty, dry finish with medium bitterness and good carbonation.
