Brasserie Cantillon has brewed in Brussels since 1900 without altering its methods. This Gueuze is a classic blend of lambics of different ages—young and mature—that together create balanced tartness. It is 100% lambic, with no added sugars or other ingredients. The nose reveals citrus, wood and characteristic funk. The palate brings light to moderate sourness with notes of apple, hay and rustic yeast character. The mouthfeel is medium with fine carbonation and a dry finish that lingers. This is a beer with taste evolution that will continue to develop in the bottle for years.
