Timmermans

Founded in 1702 in Itterbeek, a suburb of Brussels, Timmermans is the oldest lambic brewery in the world still in operation. What began as a small brewing operation in a disused cow shed has grown into one of Belgium's most iconic beer institutions, continuously producing spontaneously fermented beers on the same site for over three centuries. In 1993, the brewery was acquired by John Martin Brewery, marking a new chapter while preserving its deep-rooted lambic heritage. The brewery and its historic site in the municipality of Dilbeek have since been classified as protected heritage, recognised as both an architectural and historical treasure. Timmermans specialises in lambic — a unique beer style brewed with 30% wheat and fermented through spontaneous fermentation, relying entirely on wild yeasts and bacteria from the surrounding Senne Valley air. Their portfolio includes traditional gueuze, fruit lambics, and kriek, styles that are deeply embedded in Belgian brewing culture. After a period associated with sweeter, more accessible interpretations, Timmermans relaunched their Oude Geuze in 2009, returning to the dry, complex character of authentic traditional lambic. The brewery's revival of Oude Geuze has earned them awards and renewed respect among lambic enthusiasts. Timmermans has also collaborated with Guinness, blending their lambic traditions with iconic stout heritage. With over 300 years of uninterrupted brewing history, Timmermans remains a living monument to Belgian spontaneous fermentation.
