Hair of the Dog Brewing Company is a Portland, Oregon brewery founded in the early 1990s by brewer and chef Alan Sprints. Established around 1993–1994, it quickly became one of the most important and influential craft breweries in Oregon, earning a reputation for pushing boundaries at a time when the Northwest's beer scene was still relatively constrained. Situated in an industrial part of Portland, the brewery also operated a beloved tasting room that drew visitors from around the world. Hair of the Dog built its identity around unusual, high-gravity and cellar-worthy beers, with a strong focus on aging and bottle conditioning. The brewery was celebrated for its adventurous approach to bierstijlen, crafting ales that rewarded patience and contemplation. The portfolio included landmark beers that became touchstones of American craft brewing culture, blending old-world brewing traditions with bold, experimental techniques. Among its most iconic beers are Adam, a strong dark ale inspired by the historic Adambier style from Dortmund, and Fred, a barleywine-style ale. These beers attracted international attention — Adam was even brewed collaboratively in the Netherlands with Ramses Bier as a Dutch adaptation called Dutch Adam. Although Hair of the Dog has since closed, its legacy as a pioneering Portland brewery endures among craft beer enthusiasts worldwide.
