Brouwerij Girardin is a historic lambic brewery located in Dilbeek, in the heart of the Pajottenland region of Flemish Brabant, Belgium. Its roots stretch back to 1845, when the brewery was established as part of a nobleman's estate. In 1882, the farm and brewery were acquired by the Girardin family, with Franciscus-Alexius Girardin (born 1847) considered the founding father of the family dynasty. The brewery has remained in family hands ever since, continuing a tradition of spontaneous fermentation brewing that is deeply tied to the landscape and microclimate of the Senne Valley and Pajottenland.
