Bruxellensis from Brasserie de la Senne is a Belgian blonde ale where wild yeast drives the character. Fermented entirely with Brettanomyces—a natural yeast native to Brussels—the beer spends four months in the bottle before release, developing its distinctive profile. The nose reveals dry Brett notes alongside rustic malt and subtle fruity esters. On the palate, complexity emerges: funky Brett character mingles with toasted grain and a pleasant tartness. The finish stays dry with a lingering, clean bitterness. This reflects founder Yvan De Baets's brewing philosophy: make what you believe in, balancing hop, malt and fermentation character. European hops and cool-fermented yeast create a beer that tastes neither aggressively modern nor purely historical—just honest.
