Gregorius is Austria's first Trappist beer, brewed by the monks of Stift Engelszell, a monastery founded in 1293. Named after the abbey's late abbot, this dark, strong ale is crafted using traditional Trappist brewing techniques with local honey, Alsatian wine yeast, malted barley and hops. The beer reveals a complex character built on roasted malt, coffee and dark fruit notes. The addition of honey and wine yeast creates an interplay of sweet tones—toffee, molasses and brown sugar—layered with hints of chocolate and bread. The palate is full and sweet with minimal bitterness, while the finish carries a warming alcohol note and lingering sweetness reminiscent of sherry. Gregorius tells the story of Austria's only Trappist monastery in a glass, distinguished by its distinctive ingredients and monastic heritage.
