Septem Microbrewery in Greece crafts 8th Day, an American IPA built on three American hop varieties: Mosaic, Citra and Simcoe. At 7% ABV and 65 IBU, this unpasteurized ale delivers a rich aromatic character and lingering finish. The aroma opens with biscuity malt and caramel hints, then tropical fruit emerges—mango, grapefruit and citrus. On the palate, sweet malt balances moderate to medium bitterness with piney, floral hop notes. The body is well-defined and clean without heaviness. The finish is long and pleasant, with bittersweet character and persistent notes of mango, citrus and resinous hops.
