Bien-Sûr from De Dochter van de Korenaar is a barrel-aged sour ale born from an ambitious brewing experiment: a single 2000-litre base beer yielded five distinct fruited variants. This version matures for approximately one year in gin and wine barrels, developing a balanced, fruity sourness with subtle gin-forward undertones. The Baarle-Hertog brewery is known for unconventional, complex beers that challenge convention. In Bien-Sûr, that philosophy shines through the considered barrel work: gin and wine casks add layers without overwhelming the sour foundation. The result is refined and thoughtfully composed.
