Chimay SpĂ©ciale 1956 honours the origins of what would become Chimay Blue. Brewed in 1956 by the monks of Scourmont Abbey as a Christmas beer, this limited edition recalls an era when Chimay beers were identical in bottle, distinguished only by cap colour. Dark, rich and warming at 9% ABV, it carries notes of plum, raisin, caramel and toffee, with a gentle spice from the abbey's signature yeast strain. Father ThĂ©odore's isolated yeastâstill in use todayâgives the beer its distinctive character, balanced by measured hop bitterness. A contemplative strong ale that rewards patience; it develops further with years in the cellar.
