Tatie Tatin is a dark red tripel from Brussels Beer Project, a striking departure from the pale blonde typical of the style. This robust 9.1% beer draws on thoughtful ingredients: Pale Ale malt, malted wheat, malted oats and dextrine malt create the foundation, with Cara 20 adding depth. The hop bill — Magnum, Cascade, Chinook and Sorachi Ace — introduces complexity while allowing apple character to shine through.
In the glass, Tatie Tatin presents fuller and thicker than a conventional tripel, with subtle medicinal notes and a light tartness that balances the sweet maltiness. Apple — both fresh and baked — threads through the nose and palate. Though no longer in production, it remains a notable example of how Brussels Beer Project merges experimentation with Belgian brewing tradition.
