Rascals Brewing Co., based in Dublin, reinterprets the farmhouse saison with this adventurous blend of raspberry, hibiscus and red wine barrel aging. Raspberries and hibiscus were added at multiple stages—during the boil, fermentation, and again in Sangiovese red wine barrels with wild yeast. At 7% ABV, the result is a layered saison that balances tart fruit character with subtle citrus bitterness and floral notes. The Sangiovese barrels contribute wine-like complexity and depth, while the wild fermentation and fruit additions create a lively tartness. This is a bold departure from tradition, where fruit, freshness and fermentation converge in a single glass.
