Oedipus Brewing, the Amsterdam-based collective founded by four friends, created I Open My Eyes as an ambitious single-batch project: 2000 litres of base beer yielded five distinct fruity variants. This lambic merges spontaneous fermentation with intentional souring and fruit additions, delivering a complex, refined drinking experience. The nose reveals tropical fruit and subtle sourness. On the palate, fruitiness takes centre stage with pleasant balance between sweetness and acidity. The finish is dry and elegant, with a lingering aftertaste.
