Brasserie Cantillon has brewed in Anderlecht, Brussels since 1900 and remains one of the last traditional lambic breweries in the city. This Gueuze 100% Lambic Bio is the result of a carefully considered blend of lambics of different ages, each matured in oak barrels. The brewing process follows the classic method: two-thirds malted barley and one-third unmalted wheat, spontaneously fermented and finished with aged noble hop bitters of two to three years old. The flavour is sharp and sour with fruity notes of apricot and lemon. Vanilla and grapefruit emerge in the finish, while the dry aftertaste lingers. This is a beer that evolves in the glass and can mature for up to twenty years after bottling.
