Maurice honours master brewer Maurice Heyvaert and the craft of traditional lambic brewing. Brewed by De Dochter van de Korenaar, a Dutch brewery founded in 2007 by Monique and Ronald, this lambic blends one- and three-year-old lambics and undergoes bottle refermentation. The result is a bone-dry, fresh-sour sparkling beer with wood-aged complexity and subtle fino sherry notes. The intricate fermentation process, the art of blending young and aged lambics, and the magic of maturation define this beer.
