Boon Framboise is a traditional raspberry lambic from Brouwerij Boon in Lembeek, brewed using centuries-old spontaneous fermentation methods. This beer blends young and old lambic aged in oak barrels, creating a refined balance between fruit character and sourness. The nose is dominated by genuine raspberries with the characteristic lambic sourness and a subtle sherbet-like quality. On the palate, raspberries take centre stage, complemented by delicate lactic notes and minimal bitterness. The finish is dry and tart, with a light body that remains highly drinkable. This is an authentic fruit lambic that preserves the quality of fresh raspberries rather than resorting to artificial sweetness.
