De Troch is one of Belgium's oldest lambic breweries, with roots stretching back to the 18th century when Pieter De Troch first brewed on the same site in Wambeek, a small village near Brussels in the Pajottenland region. The historic brewery buildings date from 1795 and continue to define the character of this family-run operation. In 1851, the brewery was taken over by Petronella, granddaughter of the founder, whose husband Egidijus expanded production significantly. The brewery passed from generation to generation, and in 1974 Jos Raes took over from his uncle Louis De Troch. Today, the next generation also plays an active role in carrying the brewery forward. De Troch specialises in lambic-based beers, relying on spontaneous fermentation using wild yeasts native to the Senne Valley and Pajottenland. Their portfolio includes traditional styles such as lambic and faro, brewed using methods rooted in centuries of local tradition. France became a key export market, though French consumers found the brewery name difficult to pronounce, prompting Jos Raes to introduce the Chapeau brand for international markets. The Chapeau range has since become the brewery's best-known identity abroad. Beyond their own production, De Troch has also played a supporting role in the broader lambic community. The revived Eylenbosch brewery, for example, held its first official brew day at De Troch in April 2019, underlining the cooperative spirit among Pajottenland's traditional lambic producers.
