Trignac XII is an ambitious barrel-aged expression of Kasteel's classic Tripel, brewed by Van Honsebrouck in Izegem, Belgium. This robust 12% ABV beer matures for at least six weeks in carefully selected cognac casks, infusing the traditional tripel foundation with distinctive warmth and refinement. Flavour unfolds in layers: an initial sweetness with vanilla and banana notes, followed by the smooth, rounded cognac profile that blends seamlessly with fruity undertones. The finish carries a subtle tartness that counterbalances the alcohol strength, resolving into a gentle, lingering bitterness. This is a beer for reflection—complex enough to command attention, yet restrained in its presentation.
