Twisted Highness from B Bop Fermentory is an ambitious sour ale from Hungary, inspired by the Singapore Sling cocktail. This 8.5% imperial sour is fermented with Morello cherries, Palo Santo wood, fresh sage and botanical gin, rounded out with Korean ingredients. The result is a refined, drinkable sour with a complex herbal garden of flavours. The nose reveals citrus and spice, while the palate shows balance between the tartness of the cherries, the woody notes of Palo Santo and subtle botanical nuances.
