Ambrosial is a mixed-ferment wild ale from Zomerdijk Brewing & Blending in the Netherlands, aged for 26 months in Bordeaux barrels. At 7% ABV, this sour ale grew from a single 2000-litre base brew that was split into five distinct fruited expressions. Bright and assertive on the palate, it combines complex fruit character with the funky, funky notes typical of extended barrel aging and wild fermentation. The wine barrels contribute subtle depth and structure to this well-balanced sour ale.
