
't Brugs Bierinstituut is a beer institute and brewing initiative based in Bruges (Brugge), in the West Flanders region of Belgium. Rooted in the rich brewing heritage of one of Europe's most iconic beer cities, the institute combines a passion for Belgian beer culture with the craft of recipe development and brewing education. The project is closely associated with beer teacher and brewmaster Eli, who played a central role in developing some of the institute's earliest beers. Rather than operating its own production facility, 't Brugs Bierinstituut works with established breweries to bring its recipes to life. One notable collaboration saw De Witte Zwaan brewed at Brouwerij Kerkom in Limburg, a white beer coming in at 5.0% ABV. The institute's portfolio leans into Belgian tradition, with styles ranging from old browns to strong ales. A standout example is Den IJzeren Arm, a four-grain tripel brewed at 9.0% ABV, showcasing the institute's ambition for full-flavoured, high-gravity beers. Several of 't Brugs Bierinstituut's beers draw inspiration from Bruges' medieval history, including a beer named after Boudewijn's consort Judith and references to figures like Galbert van Brugge. With an emphasis on storytelling through beer, the institute positions itself as a guardian of Bruges' brewing legacy.
