Penyllan Brewery

Penyllan Brewery is a craft brewery founded in 2015 on the island of Bornholm, Denmark, run by Jessica Andersen. Situated with views over the small harbour of Tejn on the eastern coast of Bornholm, the brewery draws inspiration from the island's rich brewing heritage, including beer brewed in this part of the world in the late 19th century. Penyllan has established itself as a distinctive voice in Danish craft beer, rooted firmly in its island surroundings. The brewery specialises in wood-aged wild ales, a niche and labour-intensive corner of the craft beer world. Penyllan Wild Ales are matured for extended periods, developing complex layers of flavour through wild fermentation and barrel ageing. This focus on spontaneous and mixed fermentation sets Penyllan apart from more conventional craft breweries, placing it firmly within the tradition of farmhouse and wild ale brewing. Penyllan has built a reputation well beyond Bornholm, participating in events such as the Anarkist Beerlab at Heartland Festival alongside respected names like Mikkeller HQ and Alefarm Brewing. The brewery operates a bar and shop — the Penyllan Brewery Bar & Shop — and has collaborated with international partners, including a joint brew produced in Seoul. Its beers have been featured at notable venues such as Restaurant Barr in Copenhagen.
