Brouwerij Den Herberg is a Belgian craft brewery founded in 2007 by Ann Heremans and Bart Devillé, located in Buizingen, in the municipality of Halle in the Pajottenland region. This family-run brewery is rooted in one of Belgium's most celebrated beer landscapes, a region historically synonymous with spontaneous fermentation and lambic brewing traditions. The brewery is known for its production of lambic, the iconic spontaneously fermented beer style native to the Pajottenland and the Senne valley. Den Herberg has collaborated with other respected Belgian brewers, including supplying lambic batches to Brouwerij Kestemont in 2019 and 2020. Beyond lambic, the brewery also produces a broader range of beers, including the Cuvée Devillé amber ale and other styles served in their cosy on-site café. The combination of a working brewery and an inviting taproom makes Den Herberg a destination for beer enthusiasts exploring the Pajottenland. Den Herberg has been featured in specialist beer publications such as Belgian Smaak, which highlighted the brewery's approach to lambic production in the Pajottenland. The brewery appears in market research reports alongside other prominent Belgian lambic and gueuze producers, reflecting its recognised place within this traditional and highly respected segment of Belgian brewing.
