The brewery was established around 1999–2000 with a clear mission: to revive the nearly extinct Gose style in its city of origin. Gose is a tart, top-fermented wheat beer brewed with coriander and salt, and it had all but disappeared from Leipzig before Bayerischer Bahnhof brought it back to life. The historic train station setting — which closed as an operational railway terminus in 2001 — gives the brewery a uniquely atmospheric character that draws both beer enthusiasts and history lovers. Bayerischer Bahnhof's portfolio is anchored by its Leipziger Gose, a sour wheat beer noted for being more subtle and balanced than many contemporary craft interpretations of the style. The brewery specialises in traditional Leipzig beer culture, focusing on lactic fermentation techniques that define authentic Gose. Alongside its flagship, the brewery has also produced more adventurous offerings, such as the Goseator, a 10% ABV Gose aged in tequila barrels, demonstrating a willingness to push the boundaries of the style while remaining rooted in its heritage.
