Brasserie l'Apaisée's Double Dark Saison is an unconventional dark beer aged two years in foeder, blending the spicy dryness and refreshing lift of a farmhouse saison with roasted malts and wild fermentation. The result is visually striking—cola-like in appearance—yet flavourfully sophisticated. Notes of oak, brett funk, and moderate acidity balance caramelised malt sweetness, while dried plum emerges on the nose. A rare style that marries Belgian farmhouse tradition with barrel-aging depth.
