Biga is an ambitious creation from Birra del Borgo, the Italian brewery from Borgorose known since 2005 for experimental brewing approaches. This beer blends three distinct styles: a saison brewed with spelt and wild yeast, combined with elements of other brewing traditions into a single coherent expression. The result is a golden-hued beer with refined balance between fruitiness and tartness. The aroma displays sweet and sour fruit notes, while the palate is marked by sharpness and mineral character that quickly follow honey and fruity impressions.
