Xyauyù is Teo Musso's experimental masterwork, named after his daughter's imaginary friend. This Piedmont Barley Wine undergoes a distinctive macro-oxidation process and matures for twelve months in Islay casks, yielding a beer of profound, layered character. The glass reveals a rich tapestry of dried fruits, raisins, dates and figs, complemented by caramel, toasted malt and subtle smoke. The palate is intensely sweet with hints of jam and citrus zest, balanced by light bitterness. This is no ordinary barley wine: it embraces oxidation as a feature, not a flaw. The finish is gently herbal and bitter, with a lingering aftertaste. A beer for contemplation, not haste.
