Birra Baladin, based in Piozzo in Piedmont, brews this Metodo Classico Riserva 2016 using the traditional champagne method: bottle fermentation with autolytic aging. The result is a refined brut bière at 10% ABV with a light amber hue and delicate white foam. The nose reveals ripe fruit—apple, apricot, orange—alongside subtle toast and spice. The palate is dry and elegant, echoing the fruity aromatics with light toasted notes; high carbonation and alcohol warmth lend a wine-like refinement. The finish is clean and dry, without excessive sweetness. Brewed with barley malt, wheat, buckwheat, a blend of spices, hops and yeast. This is a serious, complexly developed barleywine better suited as an aperitif or pairing with refined dishes than as an everyday drink.
