Isaac is Italy's first craft witbier and remains a benchmark within the style. Teo Musso brewed this beer in 1996 at Birra Baladin in Piedmont using Italian barley and Bolero, a heritage wheat variety. The recipe blends subtle Italian spices—bergamot and coriander—with citrus zest. It pours a pale yellow with a fine, creamy head and slight haze. The aroma is pleasantly citrusy with gentle notes of yeast and spice. On the palate, a fresh, delicate sweetness unfolds with orange and citrus character, supported by soft wheat malt. The finish is clean and lingering, offering a gentle, refreshing quality that makes Isaac an ideal aperitif or pairing for light, summery dishes.
