Rochefort 6 is the oldest of three beers brewed by Abbaye de Notre Dame de Saint Remy, a Trappist monastery in the Belgian Ardennes. Created in 1955 to celebrate New Year, it proved so successful that it became permanent and remains their most produced beer. The beer delivers a full, rich character without heaviness on the palate. Dark fruit—raisins and plums—forms the core, joined by hints of honey, toffee, and light chocolate. Rochefort's distinctive house yeast strain contributes warming spice and earthy complexity. A subtle bitterness provides clean closure. At 7.5% ABV with a creamy, medium body and lively carbonation, this is a remarkably drinkable strong ale that embodies the craft of Trappist brewing.
