This blend marries spontaneously fermented beers aged one to three years, where wild yeasts and bacteria, particularly Brettanomyces, drive the fermentation and flavour development. The beer displays an intense golden hue with a lively yet fleeting head. Its character is assertive: pleasant lactic acidity forms the foundation, complemented by a subtle saltiness in the finish. The wild fermentation imparts a complex, living quality that evolves with time.
